Sie schon mal
Brachsen (russ. Лещ) gegessen? Sie
wissen nicht mal was das ist? Naja, für Laien sieht ja auch ein
Fisch aus wie der andere. Und selbst geben sie keine Auskunft,
die Fische. Wenn Sie also in Europa wohnen und ihre Angel in den
See oder Fluss halten, da wo ein bisschen Schlamm ist, dann
hängt vielleicht auch mal eine Brachse dran. Die ist äußerst
schmackhaft, wenn man sie richtig zubereitet, so wie wir das
kürzlich gemacht haben. Nur ganz grätenfrei ist die Brachse
nicht. Das wird man auch in Züchtungen nicht schaffen und, mal
ehrlich wollen wir das? Wir haben ja schon Menschen genug ohne
Rückrat, gelle? Na, jedenfalls hat die Brachse für verwöhnte
Deutsche zuviele Gräten und ist deshalb heute schwer zu
bekommen.
Nun, also, nehmen Sie den
Fisch aus, sie wissen schon, am Leib aufschneiden und den
inneren Krempel rausholen und der Katze schenken. Dann legen sie
ihn in reichlich Salz ein, den Fisch, am besten über Nacht. Das
war’s auch schon. Sie können nun die Brachse backen, piekfein
z.B. im Römertopf. Da gehe ich nicht drauf ein, so was können
Sie in jedem Kochbuch lesen. Schauen Sie sich die Bilder an und
Sie bekommen eine schwache Ahnung wie UNSERE Zubereitung
aussieht. Dass es schmeckt, zumal in frischer Luft, ist dann
eine Selbstverständlichkeit.
Für 5-6 Erwachsene
3 Brassen á etwa 4-5
kg.
Frisch ausgebuddelte
Kartoffeln (ach, sie haben keine mehr im Garten, nur noch Rosen?
Na so ein Pech, denn nehmen Sie doch die aus dem Supermarkt…)
Butter, Salz, Pfeffer
Machen Sie ein schönes
Feuerchen und legen sie den Räucherkasten mit Erlenholz aus. Das
eignet sich besonders gut zum Räuchern, es gibt viel Rauch,
riecht gut und verstärkt den Geschmack. Nun lassen sie es eine
gute Stunde räuchern, 30 Minuten vor dem Ende der Aktion legen
Sie noch die Kartoffeln dazu. Das war’s. Wie immer ein Rezept
ohne 1000 Zutaten, schmackhaft, nahrhaft und sättigend. Guten
Appetit.

Ach so,
ehe ich’s vergesse: Sollten Sie nur leicht bekleidet
sein, ich meine Sie sind ja privat und in der Natur, kommen Sie
weder mit Ihren wertvollen Teilen, noch mit Ihrer
Sitzfläche gegen den Ofen. Das tut weh.
Decken Sie auch beim Essen Ihren Unterleib mit einer Schürze ab,
erstens ist Fischgeruch dort lästig, Brandblasen auch.
Der Fisch ist ziemlich grätenhaltig. Spucken Sie die Gräten
ruhig in die Natur, sie sind organisch und vergammeln.
Allerdings nicht dorthin, wo Sie später mit Ihrer Liebsten
entspannen wollen. Gräten am Hintern sind
unangenehm. Sollten Sie den Nachtisch
vergessen haben suchen sie die Gräten Ihrer Frau.
Vielleicht finden Sie dabei auch noch was anderes. Und
sollte Ihre Frau suchen, dann stellen Sie sicher,
daß Sie auch was findet. Fisch soll gut
für die Potenz sein. Nicht der Fisch, aber das Eiweiß.
